Dark Chocolate Buttercream Frosting

Dark chocolate is the chocolate of choice in this household- hence this rich chocolate buttercream frosting. For the record ALL chocolate is eaten in this house (there is no discrimination). There does seem to be several family members who prefer dark chocolate. I actually love white chocolate but today we are talking about chocolate.

Whetstone Chocolate

We recently did a tour at Whetstone’s Chocolate and I loved learning the difference between all the different chocolates. Which ones had more or less cocoa and cocoa butter in it. I also found a great gift idea for those who are gator fans or need a gift from Florida. They had milk and dark chocolate solid gators! They also had some lovely seashell shaped chocolates.

Ok, back to chocolate frosting. We don’t just have chocolate buttercream frosting we have a rich chocolate buttercream frosting. There is a high cocoa powder to powdered sugar ratio. It does seem we could just substitute cocoa powder for a dark cocoa powder to achieve the results we want but I don’t always have that on hand. I always seem to have cocoa powder in my pantry though.

The taste is richer, and the color is darker than regular chocolate frostings. The frosting is thick. If you want it to be thinner add more whipping cream. If you want it to be a little lighter in texture (not in calories) add more room temperature butter. Using a mixer also helps with the texture of the frosting rather than just mixing with your hand.

This frosting is so easy to whip up. I always have little helpers lick my mixer and bowl when I’m done frosting my dessert. As a child, I have fond memories of licking the bowl so I hope my kids will also have positive memories while being in the kitchen.

Ingredients

  • 6 TBSP butter (room temperature)
  • 2 1/3 c powdered sugar
  • ¾ c cocoa powder
  • 6-8 TBSP whipping cream
  • 2 tsp vanilla
  • ¼ tsp salt

Instructions

Using a highspeed mixer whip all ingredients together butter, powdered sugar, cocoa powder, whipping cream, vanilla and salt.
